I may have outdone myself! My brain came up with something really yummy today!

I was in the mood for a tuna melt. You know the kind of comfort food your momma made you when you were little? Needed a Low Carb Twist. This a bit up there in calories, but WOAH Nellie did they make my tummy happy!

Sometimes you just have to play around with different ideas for your food.

KETO LOW CARB GLUTEN FREE

TUNA MELT POPPERS

3 or 4 (3 oz) of Sweet Mini Peppers halved and cleaned

1 can of Albacore Tuna in Water drained (I use Bumblebee)

2 tbs Mayo

2 tbs Bacon Crumbles

1/2 cup shredded colby jack cheese (halved)

1/2 tsp dried chives

1/2 tsp red pepper flakes

1/2 tsp minced onion

1/2 tsp McCormick’s Honey Sriracha Seasoning

Preheat oven to 400 degrees. Mix well tuna and ingredients with 1/2 of the cheese.

Load each half of Mini peppers and put in cast iron or like skillet. Top with remaining cheese and some chives.

Cook for 15 minutes or until bubbly.
