LOW CARB KETO GLUTEN FREE

LEMON POPPY SEED EGG LOAF

8 eggs scrambled

8 oz softened cream cheese

4 tbs melted butter

6 Tbs coconut flour

1 tsp GF Baking Powder

1 tbs Lemon Extract or 2 tbs fresh squeezed lemon juice

1 tsp salt

1 tsp cinnamon

2 tbs TRUVIA sugar substitute

1 tsp poppy seeds

1 tbs vanilla

Bake at 350 degrees for 30-35 minutes for mini loaves or 40-45 minutes for full size

LEMON ICING

1/4 cup TRUVIA confectioner’s sugar

3 tbs heavy whipping cream

1/4 tsp vanilla

1/t tsp lemon extract

Mix together and drizzle over Eggloaf when cooled
