Keto Eggloaf "Sweet bread" with Cacao Nibs and Pecan
I love experimenting with the sweet KETO egg loaf recipes. It has become one of my husband’s favorite things that I make. I try to make them on Monday so he has a dessert type food for the week when his sweet tooth strikes.
Today I added Psyllium Husks for Fiber. Doing research, I realize, we really don’t get enough. So I am trying to add more to my recipes to help out a little bit.
KETO LOWCARB GLUTEN FREE
KETO EGGLOAF SWEETBREAD WITH CACAO NIBS AND PECANS
8 oz of cream cheese (softened in Microwave for 1 minute)
4 tbs Butter Unsalted (melted in Microwave for 30 sec)
2 tsp Vanilla extract
1/3 Cup Monkfruit Sweetner (Golden)
Mix well wet ingredients with mixer.
6 tbs coconut flour
1 tsp salt
1 tsp cinnamon
1 tsp xantham gum Gluten Free
2 TBS Psyllium Husks
Mix well and add to wet ingredients. Mix with blender.
1/3 cup of Cacao nibs chopped into little pieces
2 tbs of chopped pecan pieces
Bake at 350 degrees for 45 minutes.
